My first Breakfast "Sunday" !




Forgive me for falling off the face of the Earth...I tend to do that sometimes ;)

I'm thinking about changing my blog name and starting over fresh simply because I feel that this existing blog has not gone in the direction I hoped. Though this was largely due to a lack of time and not conscious error, I feel like I should dabble in a new blog. Anyway, more thoughts on that later since I have something more exciting--and obviously more delicious--to tell you about.

After hearing about Katie's Magic Bullet Giveaway, I was inspired to make my first blended grains concoction. Since she is the chocolate-covered queen, I tailored my breakfast hankering accordingly...

And hence, my first Breakfast Sunday was born.
For those of you teasingly wondering: this is not my first time eating breakfast on a Sunday. Try to hold on to your surprise :D

So what made this a truly amazing Sunday?

Well, first off.......
IT WAS FREAKIN' DELICIOUS.



and second of all...

it was a Sunday Sundae.

Seriously, what more could you want?



I know that you wanted a bite of my chocolatey, gooey, steamy, yummo-licious, ginormous, pudding-y, velvety, utterly euphoric...


Oreo Cookie Breakfast Sundae

You're jealous. Admit it. Don't fight it. Just make it. Gobble it up. And don't forget to thank me later!
Whatcha gonna need:
1/2 cup oats
1 3/4 cup water (divided)
1/4 tsp vanilla extract
dash salt
sweetener of your choice (stevia, maple syrup, honey, agave, sugar etc)
1-2 TBS cocoa powder (depending on how cuckoo for cookie sundae you are)
a few chocolate chips (i like mine dark. just like my men? ...ok ignore that and stick with the choco chips)
cocoa powder (for garnish)
almond milk (or any other milk)

Whatcha gonna do:
1. Using Katie's "Voluminous Oatmeal" trick, combine oats, 1 1/2 cups of the water, vanilla, and salt in a bowl. Microwave on high for 4 minutes, or until oats have thickened but not turned into a rock hard brick. Oat bricks = no bueno.

2. Add the extra 1/4 cup of water. The oats will absorb the water overnight, so don't worry if the mixture looks a bit watery.

3. Now, cover the oats with plastic wrap and punch a few holes in the wrap, so the oatmeal can breathe. YOU didn't know oatmeal can breathe? Well, now ya do.

4. Place oats in the refrigerator until cold, preferably overnight.
5. In the morning, add the sweetener (I used stevia), cocoa powder, and chocolate chips to the mixture. Then, using a hand blender, blend to your little hearts' content. The less you blend, the more chewy/chunky your sundae will be.

6. Now, garnish with extra cocoa powder and almond milk (a.k.a da creme filling!), and begin gobbling with a spoon..daintily of course.

This. was. so. good.

I would call it a cross between Jello's cookies and cream instant pudding and chocolate whip cream. I would also call it YUM.
